You will need:
- 4 x Veal slices
- 1 x egg wash, flour, salt & pepper
- 100 gram protein boost
- 30 grams panko crumb
- 1 x bunch asparagus blanched
- Hollandaise sauce
- 1 x 30 grams Roquefort cheese
- ½ bunch chives chopped
- 1 x 30 grams Wagyu Oil
Directions
- Dip veal slices into flour/egg wash and coat with panko and protein boost
- Mix Roquefort cheese with hollandaise and add chives
- Pan fry veal in Wagyu Oil until cooked, about 2-3 minutes per side on medium heat
- Top with blanched asparagus and spoon over hollandaise
